Green Chile Fronds

I "blame" Spiffy (from Where the Lights are Bright) for looking so darn great in her dress that I had to (virtually) run to Forever 21 to buy it immediately. So now I am the proud owner of this pretty (and cheap! but doesn't look it) dress - and I think I now also receive a year's subscription to Seventeen magazine, which should be a blazing finger in my face about Forever 21's target demographic and how I'm not it.




Dress: Forever 21 Frond Linen Blend (no longer online - check stores!)
Belt: Anthropologie City Safari (worn here and here before, and bunches before that)
Necklace: Anthropologie Nueva Granada (worn here and here before)
Shoes: Vince Camuto (worn here and here and here before)

On to more "my age" appropriate things. Yay for life's small victories - dinner last night turned out really well. I finally got a chance to make my creamy green chile chicken enchiladas and the BF loved them (which I am so glad, because I made enough for dinner for the rest of the week).

I don't have my original recipe for it, but it is very similar to this one - the main difference is that I rolled my filling into the tortillas instead of layering. And instead of cooking some chicken breast, I just bought a whole roasted chicken, removed the skin and shredded it - perfect amount for the recipe.

Food purists be warned though, this recipe is very Semi-Homemade Cooking with Sandra Lee-like in that it uses a bunch of convenience foods to make the sauce - but it is easy and soooo good and filling. And I added in some refried beans and made a cheater's version of Mexican rice for the sides. Carb heaven ...

  1. I love your dress! ha! I might have to buy that necklace if you don't stop wearing it! stop wearing it! Don't you just love finding something good at forever 21? It's like cheating and getting away with it or winning at a blackjack table or seeing a unicorn...
    anyway those chiles look delish, yum.

  3. You look so stinkin' cute in that dress! And that belt ... I've had it on my wishlist for so long, and you're making me want to pull the trigger and buy it! So so cute! I'm glad to finally see someone wearing it!

    And I love Semi-Homemade with Sandra Lee. As Marie mentioned, she's practical for people who are on the go but like to cook a decent meal (and who love a good cocktail!! HA!).

    And might I say that your meal is making my tummy growl over here! Yum! :)

  6. For cruds sake, I think you ordered the day after me and I still don't have my Spiffy dress -WHINING - why is everything shipping to me so slooooooowly these days. It's killing me. The dress is equally adorable on you - it looks great belted.

    And chicken enchiladas are one of my fave foods ever - your dinner looks mouth watering. YUM. Do honey lime enchiladas appeal to you? I have an easy recipe if you want it. Oh man, I need to make some soon. Like maybe tomorrow.

  12. F21 cracks me up....like, I hate it SO much, but then every once in a while I find something awesome and I can't stop looking. It's like thrift shopping...only better? worse? I'm not sure. I want to get that belt so bad..........

  15. Thanks for your comments, ladies. I'm glad that I'm not alone in being surprised at finding a really good buy at F21 every now and again. I've gone through too many "what the-?!" purchases with them so it is nice to see they are upping their style quotient ... and not making scandalously short dresses!

    Thanks for your comments about my enchiladas too - I was especially proud of this recipe and glad it turned out. I admit, it is a total gut buster though!

    On another note.. that dress does look fab on you.. and definitely does not remind me of F21.... I'm turning 28 this month, does that mean I need to stop shopping at F21. I had this discussion with my BFF several months ago.. and we never came to an actual decision.. ha ha. I mean there are some pieces there that can totally translate into a more mature wardrobe.. you are clearly an example of that! :)

  20. My dress is here, and I'm wearing it today - hooray!

    Here is the recipe - it's super duper YUM! Let me know if you try it :)

    6 tablespoons honey
    5 tablespoons lime juice (1 large lime)
    1 tablespoons chili powder
    1/2 teaspoon garlic powder

    1 pound chicken, cooked and shredded (I used 3 small chicken breasts)
    8-10 flour tortillas
    1 pound monterey jack cheese, shredded
    16 ounces green enchilada sauce
    1 cup heavy cream

    Mix the first four ingredients and toss with shredded chicken. Let it marinate for at least 1/2 hour (I tossed mine together in a ziploc bag in the morning and let it sit in the refrigerator all day). Pour about 1/2 cup enchilada sauce on the bottom of a 9X13 baking pan. Fill flour tortillas with chicken and shredded cheese, saving about 1 cup of cheese to sprinkle on top of enchiladas. Mix the remaining enchilada sauce with the cream and leftover marinade. Pour sauce on top of the enchiladas and sprinkle with cheese. Bake at 350 degrees for 30 minutes until brown and crispy on top.
